I think I’ve found my new favourite holiday. Today is National Milk Chocolate Day! Yup, you heard me, we are fully EXPECTED to be stuffing our faces full of milky chocolate treats today.
In fact I’d go as far as to say you’d be doing your country a disservice by not eating your part of the chocolate.
I was food shopping earlier when I seen these Wispa hot chocolate drinks, I grabbed 4 to bring into work tomorrow to celebrate this great day with my 3 work pals.
What’ll you be having?
Chocolate cake? Rice krispie buns? Chocolate fruit fondu?
Remember guys & girls it’s expected of us to eat milk chocolate today so do your bit with a guilt free conscience!!

Today I felt like baking some bickies. I checked what was in the cupboards first & worked around that. I found some muesli, honey, & lemon flavouring.
We also need:
> 1/4 teaspoon bicarbonate of soda.
> An egg.
> 300 grams of flour
> 200 grams sugar.
> 150mls Vegetable Oil.
> Pinch of salt.
> Baking parchment.
I actually used Olive oil in lieu of vegetable oil because I didn’t have any handy, I’m not too sure if this makes a difference.
I took the raisins out of the muesli & steeped them in very hot water to let them soak, I didn’t want to put them straight into the mix & bake them dry because they’d come out very hard, so hopefully soaking them for 20mins will prevent that.
I whisked the egg then added it & everything into a bowl, I put the raisins & the water they were in in too. Once everything was all wet we were good to go.
I spread the mixture out onto the parchment & put it into a preheated oven at 180° for 15 minutes.
And here’s the finished gigantic bickie.
I left it to cool on its baking tray for 30 minutes then cut it into squares. Some were a bit more crumbly than others so I think I’ll make some custard tomorrow & add these broken bits into it. Delish!
If you try out this recipe please let me know how you get on.
